WHAT IS MATE AND HOW TO PREPARE IT.

 

Mate is just hot water served in a gourd (matero) filled with Yerba Mate. This is a popular drink in some countries in South America (Paraguay, Uruguay, Brasil, Argentina).

 

The traditional Mate is the “bitter mate”, made with just hot water. However, many variations can be found and the most common are:

a.      Bitter Mate with Herbs. Herbs are added to the hot water. Some of them are boldo, mint, camomile, aniseed, etc. Some people prefer to add the herbs to the yerba in the gourd (matero).

b.      Sweet Mate. It is hot water in the “termo”. Sugar or honey is added to the yerba in the gourd (matero) as often as wanted.

c.      Sweet Mate with Citrus. Natural grapefruit, orange or lemon is squeezed in the water with sugar.

d.      Sweet Mate with Milk. Hot milk is used instead of hot water. The milk is sweetened with caramel sugar.  

 

 

Mate preparation is extremely simple. You only need the following items:

1.      Matero (Gourd)

2.      Bombilla (Straw)

3.      Yerba Mate

4.      Termo

5.      Water or Milk

 

SUGGESTION FOR MATE PREPARATION:

 

 

Complete ¾ of the gourd with Yerba Mate.

Turn the gourd to a side leaving more Yerba Mate  in one side of it. Look at the Picture.

Introduce the straw in the side with less Yerba Mate. Fill with hot water the side with less Yerba Mate. Do not wet all the Yerba Mate. Remember: to enjoy the best Yerba Mate flavor, the water should be hot but not boiled.

Completar la ¾ parte del matero con yerba
Tapar el matero con la mano, volviendo la boca hacia abajo y agitar un poco. Volver el matero a su posición normal cuidando que la yerba quede hacia un costado.
Introducir la bombilla y luego un poco de agua tibia o fría en el costado más vacío sin mojar toda la yerba. Cebar el mate siempre en la parte más vacía cuidando que el agua no haya alcanzado su primer hervor.

Las variantes más comúnes son: Mate: amargo, dulce, con leche, con azúcar quemada, con café, con hierbas; Mate cocido: de agua o de leche;Tereré: frío, con hierbas, con jugo, con leche
