This is a relatively new yerba mate produced by Lauro Raatz S.A. in Paraguay, one of the oldest and largest producers. The yerba is grown on their own property in small fields lush with trees to keep the yerba from getting too hot. It is aged for at least 18 months and then processed the traditional Pajarito way. Lightly smoked in drying process before going into stationing.

This Yerba is delicious, not bitter at all. Brews great either hot or cold. Tastes and smells amazing. Will be buying again.

I don't know how, but Pajarito Organica is even better than the classic style.

    This mate is smooth!

Even if the listing on this site didn't mention that this mate was unsmoked, I would have known simply by how smooth it is. It is hard to describe, but I notice distinctly "tobacco" flavors, but no trace of direct smoke (as in, say, Rosemonte Especial). If you like a bitter mate, this may not actually be the mate for you because it truly has none. Even if you brew it at a really high temperature.

    a peculiar bitter taste

'Bitter' is not exactly the taste I feel when I drink this mate. (Pretty much all the mate varieties are bitter in one way or another.) So I would say this mate is bitter to acrid taste. It is quite palatable, however, and may be to someone's liking as, say, hot chili are. I am still getting used to the taste and for now mixing it with milder types of mate. I will be buying this product now and then, to bring variety.
