Traditionally yerba mate comes from the field and is processed through a large tumbler with a wood fire and a fan at one end (Sapecado) The smoke from the fire along with the intense heat is blown through as the yerba tumbles. The yerba plant is scorched and burned to a small extent. The time and temperature affect the yerba flavor. The hotter and slower the more bitter and smokey the yerba can taste.

Our Unsmoked yerba mate is processed in Brazil with a very modern and unique sapecado. There is no smoke making contact with the yerba and it is dried at a lower temperature for a longer period of time. We add a very light natural smoke flavor to our aged yerba mate to create just the right amount of classic flavor without the bitterness of traditionally processed yerba mate.
